Last-Modified header being ignored

Although the site in question is dynamic (MediaWiki, which is written in PHP) I have it set up to provide meaningful Lat-Modified headers, reflecting the last time the actual page content was changed (on the main content pages at least). However, it appears the sitemap generator is ignoring them.

please make sure that you have "Last modification time" option set to "Server response" in Sitemap generator configuration.
