I have Xml Sitemap V4 installed + with the option for Include Images info in Sitemap selected.

Where are the 'images' info stored?

My site has approx 5,000 images with Alt text but my sitemap.xmp file looks the same as before?

did you regenerate sitemap after enabling images option? Note that only images included on your pages with <img> tag are added in sitemap.
