UTF-8: Why Should I Care?

At the risk of sounding like an idiot, why should I care whether my site uses UTF-8 or not?  Should I use it?  Is it ok to use it on some pages but not others?

you should use default setting (disabled) unles syou have non-english characters in UTF8 charset in your URLs.
