can the generator also crawl files other than html?

I removed all the file types from "Exclude from sitemap extensions:" in the configuration page, but the generated sitemap still only lists all my html pages?

is it possible for the generated sitemap files to list the picture files, video files, etc?

Yes, you should add these file types in "Do not parse extensions" option, but do not add them in "Exclude from sitemap extensions" option, that should work.
